At La Baguette by R&M we make everything in-house from scratch. We only buy the raw ingredients that we then turn into typical and delicious French goods. We work using the traditional French methods and with only very little machinery. From our traditional baguettes to our sourdough or rye loaves without forgetting our everyday freshly baked pastries and our daily specials there is something for everyone!
We are also proud to be an almost zero waste café. We have made the decision of producing enough food to get us through the day until about 3pm. At this time of the day we have normally ran out of all our perishable food which means we do not throw anything away except for a few food scraps that we cannot reuse.
We are a family-owned business by brother & sister Matt and Rebecca. Matt is a French-trained chef who is passionate about French gastronomy and bringing a bit of France in Canberra in general. Rebecca, on the other hand, was trained in Australia but don't get fooled by her Aussie accent, growing up in Paris, she is a great advocate of the French culture.
Our team/family also includes 3 more members. Vu is a qualified chef and trained baker. He knows the secrets to the best bread & pastries making in Canberra! Madan is our sandwich king and you will also see him working at the front of house as he has more than one trick under his apron! Finally, last but not least, Clarisse is our Events & Social Media Manager as well as the cafe's Assistant Manager. A customer once said: 'Clarisse brings the most authentic French service'.
