Who are we?


At La Baguette by R&M we make everything in-house from scratch. We only buy the raw ingredients that we then turn into typical and delicious French goods. We work using the traditional French methods and with only very little machinerie. From our traditional baguettes to our sourdough or rye loaves without forgetting our everyday freshly baked pastries and our daily specials there is something for everyone!

We are also proud to be an almost zero waste café. We have made the decision of producing enough food to get us through the day until about 3pm. At this time of the day we have normally ran out of all our perishable food which means we do not throw anything away except for a few food scraps that we cannot reuse.

On the left, is the co-owner and head chef, Matt. His sister, co-owner and general manager Rebecca, is on the right side. They were both born and raised in Paris. Matt went to cooking school in France where he learned the french techniques. Rebecca, learned her waitressing and management skills here in Canberra. They decided to open a french café to share their love for the French cuisine and the French culture with the Australians.

In the middle of the picture, it is me, Clarisse. I grew-up in the North of France near the Champagne region and arrived in Australia in 2016. I have been trained by the most knowledgeable french people (including Matt & Rebecca!). I am in charge of all the events and I look after our social media channels, website and online shop.

 

 

This is Vuong, he is the baker and the pastry chef. Vuong was born and raised in Vietnam but arrived in Australia when he was about 15. Vu loves France and French cuisine this is why he decided to learn everything about making a good baguette and a good croissant. He was trained by Matt a few years ago.

 

 

And, this is Jacob but we more commonly refer to him as 'The sandwich king'. Jacob is the person behind our delicious baguette sandwiches. He once tried one of our baguette, realised that this is how a good sandwich should taste, and hasn't stopped making them since! He has also been trained by Matt. You will also see Jacob working front of house as he has multiple skills.
